Start with sounds, not grammar

Italian is one of the most phonetically consistent languages in Europe: what you see is (almost) what you say. Spend your first week on pronunciation, before touching grammar.

Vowels: a, e, i, o, u. They always sound the same. No silent letters.
Double consonants: casa (house) vs cassa (checkout). The doubling is real; you have to hear it and say it.
Stress: usually falls on the second-to-last syllable (ca-sa). Words like caf-fè with accented final vowel are the exception.

Buongiorno: Good morning / hello (before ~5pm).
Buonasera: Good evening.
Ciao: Hi / bye (informal).
Grazie: Thank you.
Prego: You're welcome / go ahead / please.
Scusa / Scusi: Sorry / excuse me (informal / formal).
Per favore: Please.
Sì / No: Yes / no.
Non lo so: I don't know.
Non capisco: I don't understand.
Parli inglese? Do you speak English?
Come stai? / Come sta? How are you? (informal / formal).
Sto bene, grazie: I'm well, thank you.
Quanto costa? How much is it?

The 35 words that unlock everything else

Learn these nouns, verbs and prepositions and you can build hundreds of sentences.

Nouns: casa, lavoro, cibo, acqua, caffè, giorno, tempo, treno, strada, amico, bambino, famiglia, città.
Verbs (infinitive): essere (to be), avere (to have), fare (to do), andare (to go), venire (to come), volere (to want), potere (can), dovere (must), mangiare, bere, capire, parlare.
Prepositions: di (of), a (to / at), da (from), in (in), con (with), per (for).
Question words: che (what), chi (who), come (how), dove (where), quando (when), perché (why).

A realistic first-month plan

Week 1: Sounds and the 15 daily phrases. Speak them out loud.
Week 2: Present tense of essere, avere, chiamarsi. Introduce yourself in Italian.
Week 3: Ordering food and drink, asking directions, reading a menu.
Week 4: Numbers, days of the week, telling the time, making an appointment.

By the end of month one you should be able to have a short, awkward, real conversation with an Italian speaker. That's the goal: awkward but real. Perfection comes later.
